Vegetables & Salads :: Pepper Salad

3 large yellow peppers
1 red pepper
200g feta, brie or blue cheese
½ cup cherry tomatoes
1 Tbsp red wine vinegar
3 Tbsp olive oil
½ tsp salt
Black pepper
1 Tbsp capers
1 Tbsp chopped marjoram, basil and chives
1 clove garlic, crushed

Put peppers in oven for 20 mins at 200C until skin blisters. When cool peel off skin and discard seeds. Cut into thick strips and combine with tomatoes and cheese. Whisk vinegar, olive oil, sale and pepper, capers and herbs and pour over salad.
