Vegetables & Salads :: Mediterranean Couscous Salad

3 peppers (red, yellow or orange) quartered
300g instant couscous
Salt & pepper
1 large clove garlic
3 Tbsp lemon juice
3 Tbsp extra virgin olive oil
1 tsp cumin
500g tomatoes (peeled, seeded and diced)
100g black olives
1 cucumber, peeled, seeded and cut into cubes
3 spring onions, finely chopped
125g feta, crumbled
2 Tbsp parsley, chopped

Place peppers skin side up under a hot grill until skin blackens. Transfer to a bowl, cover and leave to stand for 15 mins. Remove skin and cut into bite-sizes pieces. Cook couscous according to packet directions. Meanwhile, combine ½ tsp salt in a bowl with the garlic and crush to a paste in a mortar. Stir in lemon juice, oil and cumin. Fluff couscous with a fork, then add peppers, tomatoes, olives, cucumber, spring onions and feta. Pour garlic dressing over and toss lightly. Scatter with parsley just before serving.
