Vegetables & Salads :: Corn Fritters with Avocado Salsa

3 eggs, lightly beaten
1 Tbsp sour cream
1 Tbsp milk
50g self raising flour (1-3 cup)
1 cup corn
3 sliced spring onions
1 Tbsp parsley, finely chopped
2 Tbsp oil
1 avocado, peeled & sliced
4 shallots. finely chopped
½ red pepper, finely chopped
1 Tbsp vinegar (rosemary or balsamic)

Combine eggs, sour cream and milk into a bowl and whisk well. Stir in flour, corn, onion and parsley. Cover and stand 15 mins. Heat oil and cook spoonfuls on each side until golden. Drain on paper towel.

Salsa: Combine avocado, shallots, pepper and vinegar and toss gently. Serve with fritters.
