Soups :: Pumpkin & Ginger Soup

1 medium onion, diced
1 clover garlic, crushed
350g pumpkin, peeled and diced
25g butter
¼ tsp nutmeg & cinnamon
1 tsp tomato paste
10g ginger, peeled and cliced
3 ½ cups chicken stock
2 sage leaves
Salt & pepper
½ cup cream

Saute onion and garlic in butter. Add all ingredients except salt and pepper and cream. Simmer until pumpkin is soft then blend until smooth (strain if necessary). Return to clean pot and season to taste. Bring back to boil, then add cream just before serving. Garnish with chopped chives.
