8 medium baking potatoes
1 small onion
Olive oil
1 Tbsp fresh thyme leaves
Salt & pepper
Peel potatoes and slice thinly. Slice onion finely. Layer potatoes and onion in rows in a greased dish. Brush with olive oil and season with salt and pepper and thyme. Bake 30-40 mins at 200C until golden and tender.
