Potatoes :: Potato & Lentil Curry

½ cup green or brown lentils
3 tbsp vegetable oil
2 onions, diced
3 tbsp ginger, finely chopped
3 small chillis, seeded, thinly sliced
1 tsp ground turmeric
2 tsp ground cumin
½ tsp ground cinnamon
1 tsp salt
Zest 1 lemon
5 medium potatoes, peeled and diced
500ml water
400gm whole peeled tomatoes in juice, mashed
250ml unsweetened yoghurt
Coriander leaves for garnish

Put the lentils into a saucepan and cover well with water. Bring to the boil and simmer for 30 mins until tender. Remove from the heat and drain.

Heat oil in a saucepan and fry onions until browned. Add ginger, garlic and chilli and fry 2 mins. Add turmeric, cumin, cinnamon, salt and zest and fry another 2 mins. Add potatoes, lentils, water and tomatoes. Bring to boil and simmer 20 mins until potatoes are tender and mixture is thick.

Serve with steamed rice, a dollop of yoghurt amd a sprinkling of coriander leaves.
