Potatoes :: Potato Frittata
50g butter
3 onions, sliced
3-4 medium potatoes
2 zucchini
4 eggs
2 Tbsp water
½ cup grated cheese
Melt butter in large pan and cook onions until brown. Add sliced potatoes. Cook 15-20 mins covered. After 10 mins add zucchini. Beat eggs with water and half the cheese and pour over potatoes. Cook 10 mins. Sprinkle rest of cheese on top and grill.
