900g floury potatoes, washed not peeled
90g butter
150ml hot milk
Salt & pepper
3 Tbsp chives
2 Tbsp Italian parsley
Put spuds into pan and cover with cold salted water. Bring to boil and cook until tender. Drain and allow to steam dry. Peel them with hands (use a cloth if too hot). Add butter and mash. Add milk and herbs and beat until smooth.
