1 packet instant cannelloni tubes
Sauce:
2 medium onions
4 cloves garlic
2 Tbsp oil
1 small green pepper
1 tsp basil
½ tsp each thyme, sugar & salt
1 can tomato puree
1 Tbsp wine vinegar
¼ cup water
Saute onions, pepper and garlic in oil. Add seasonings, then puree with vinegar and water. Bring to boil and simmer
Filling:
2 cups cooked spinach
1 cup cottage cheese
1 tsp oregano
½ tsp salt, sugar and pepper to taste
Chop spinach and mix with other filling ingredients. Fill each cannelloni tube and place in greased casserole dish. Pour sauce over the top.
Topping:
1 cup cream cheese
1 cup grated cheese
Soften cream cheese and spread over cannelloni. Sprinkle grated cheese over and bake at 180C for 40 mins.
