400g fresh or dried spaghetti
2 eggs
½ up cream
½ cup freshly grated parmesan
½ tsp salt
150-200g sliced ham
25g butter, cubed
Freshly ground black pepper
Cook pasta in plenty of hot water. While pasta cooks, combine eggs, cream and parmesan and salt. Cut ham into narrow ribbons.
When pasta cooked, drain and return to pot. Put butter in to melt. Once melted add cream mixture and stir to combine. Add ham strips and generous grind of pepper. Leave to stand 1 min. Serve with extra parmesan.
