Pasta :: Pesto Pasta

250g wholemeal pasta
1 red onion, finely chopped
1 Tbsp capers
4-5 anchovy fillets, finely chopped
Grated zest of 1 lemon
Squeeze of lemon juice
2 Tbsp pesto
¼ cup lightly toasted pinenuts
1 avocado, sliced

Cook pasta until tender. While pasta is cooking, brown onion in pan. When pasta is cooked, drain and add all ingredients except pinenuts and sliced avocado. Stir through ingredients until evenly spread through pasta. Serve in pasta bowls, top with avocado and pinenuts.
