Pasta :: Penne with Broccoli, Mushrooms & Almonds

200-300g penne pasta
½ cup slivered almonds
1 tsp olive oil
25g butter
2 cloves garlic, peeled
100g mushrooms, sliced
1 head broccoli cut into small florets
½ cup cream
1 Tbsp basil pesto
50g creamy blue cheese, cubed
Salt & pepper to taste
Extra olive oil

Cook penne. While cooking, prepare sauce. Toast almonds until golden and set aside. Heat oil and butter, add garlic and sauté 1 min. Stir in the mushrooms and broccoli until tender.

Add cream, pesto and blue cheese. Stir until well combined and cheese has melted. Add salt and pepper to taste. Remove sauce from heat.

Drain cooked pasta, toss in extra oil. Add sauce and almonds and serve immediately.
