Pasta :: Lemon & Asparagus Fettuccine

200g pasta
200g asparagus, trimmed
1 tsp olive oil
3 Tbsp capers, rinsed & drained
¼ cup chopped parsley
1 avocado, sliced
Finely grated rind and juice of 2 lemons
Freshly ground pepper

Cook pasta until just tender. Meanwhile, steam asparagus until crisp tender. Drain pasta and toss with olive oil. Place in a large bowl and add capers, parsley and asparagus. Top with avocado, lemon rind and juice and black pepper.

Can squeeze roasted garlic cloves into pasta for extra flavour.
