100g dates
100g dried apricots
50g grated ginger
75-100g brown sugar
3-4 cloves
½ - 1 tsp chilli powder
150ml water
½ - 1 tsp salt
Put dates, cloves, apricots and ginger in pan. Pour boiling water over and cover for 10-15 mins. Add salt, sugar and chilli. Mix well. Bring to boil and turn heat down to simmer for 15 mins until thick. Chutney will thicken further as it cools.
*Can substitute half the amount of water with white wine vinegar.
