2 cups flour
4 tsp baking powder
100gm melted butter
¾ cup sugar (or ½ cup brown sugar + 2 Tbsp golden syrup)
2 eggs
1 cups milk
½ cup crystallized ginger (optional)
1 Tbsp ground ginger
½ tsp mixed spice
Mix dry ingredients together in a bowl. Make a well in the centre and add wet ingredients mixed together. Mix until just combined. Fill 12 greased muffin tins and backe 15-20 mins @ 200C. Cool on wire rack.
