1 cup grated cheddar cheese
1/3 cup bacon or ham finely chopped
1 ½ cups flour
1 Tbsp baking powder
Ground black pepper
1 egg, lightly beaten
2 Tbsp chopped chives and/or parsley
75g butter
1 cup milk
Grease muffin tins. Preheat overn to 200C. Place cheese, bacon/ham, flour, baking power and pepper into a bowl and mix. Add eggs and herbs.
Melt butter in the milk and fold into dry ingredients. Spoon into tins and top with extra grated cheese. Bake 15 - 20 mins.
