Lamb & Beef etc :: Meatball Potato & Tomato Stew

400G beef mince
4 cloves garlic, chopped
½ cup breadcrumbs
1 egg
4 rashers rindless bacon, chopped
3 Tbsp olive oil
3 onions, chopped
3 carrots, sliced
1 tsp paprika
½ tsp salt
freshly ground black pepper
2 Tbsp flour
400g can whole peeled tomatoes in juice, mashed
500ml beef stock
800g waxy potatoes peeled and cubed
2 Tbsp Italian parsley, chopped

Heat the oven to 190C. Put the beef, garlic, breadcrumbs, egg and bacon into a food processor and process until smooth. With oiled hands, shape the mix into about 18 large walnut-sized meatballs.

Heat the oil in a frying pan until hot but not smoking and brown the meatballs all over. Remove and set aside.

Put the pan over moderate heat and add the onions and carrots. Fry gently until the onions are soft. Add the paprika, salt and pepper and mix well.

Add the tomatoes, stock, meatballs and potatoes and bring to the boil. Transfer everything to an ovenproof dish and place in oven for 1 hour. Remove from the oven and let stand for 10 minutes so that the meat reabsorbs the liquid. Serve with parsley.
