Lamb & Beef etc :: Beef Provencale

Blade steak
Oil
2 leeks
2 cloves garlic, crushed
400g can tomatoes
2 bay leaves
1 Tbsp fresh thyme
1 cup beef stock
1 ½ cups red wine
500g baby potatoes
4 zucchini, sliced
12 black olives
1 Tbsp flour & 2 Tbsp water

Fry steak until brown. Add leeks and garlic and brown. Stir in undrained tomatoes, bay leaves, thyme, stock, wine and potatoes. Bring to boil, cover and simmer 40 mins until steak is tender. Add zucchini and olives and cook for 10 mins. Thicken with flour and water mixture and serve.
