500g old potatoes
60g butter
1 egg yolk
3 tsp horseradish
1/3 cup mayonnaise
1/3 cup sour cream
1 tsp lemon rind
Salt & pepper
200g smoked salmon
Chives
1 onion
Chopped parsely
Peel and cook potatoes until tender. Mash and add melted butter and egg yolk. Roll into balls and flatten. Place on baking tray lined with foil and greased. Bake at 180C for 20mins, turn over and bake further 20 mins.
Filling:
Combine horseradish, mayonnaise, sour cream, lemon rind and slat & pepper.
Place pikelet on plate and layer with strips of smoked salmon. Top with filling and chop chives on top with onion rings. Place more salmon on this and top with another pikelet. Garnish with parsley.
