750g salmon
5 spring onions, finely chopped
3 Tbsp capers, drained
½ cup chopped mint
3 Tbsp vodka
3 Tbsp extra virgin olive oil
Gtaed rind & juice of 1 large lemon
Salt and freshly ground pepper
Cut salmon into small pieces. Combine all ingredients and refrigerate overnight. Bake in oven until cooked through. Serve with triangles of wholemeal toast or crostini with cream cheese or on its own in a salad.
