Fish :: Fish Steaks with Oregano & Lemon Sauce

2 cloves garlic, peeled
½ tsp salt
4 Tbsp extra virgin olive oil
2 Tbsp lemon juice
1 Tbsp oregano leaves, finely chopped
2 Tbsp parsley, finely chopped
4 fish steaks (Tuna, Hapuka or Kingfish)

Crush garlic and salt to a paste using mortar and pestle. Combine paste with the oil and lemon juice in a bowl with 2 Tbsp hot water and whisk until it emulsifies. Stir in oregano and parsley. Barbeque or grill fish until just cooked (about 4-5 mins, turning once). Immediately place fish on large platter and pour the oregano sauce over.
