Dips & Dressings :: Tabouleh

1 cup bulgar wheat
2-3 cups water
¼ cup spring onions, chopped
¼ cup lemon juice
¼ cup extra virgin olive oil
1 cup chopped parsley
¼ cup chopped mint
1-2 cups finely chopped tomato (peeled & seeded)
Salt & pepper

Bring bulgar wheat to boil. Simmer for 2-3 minutes then let stand for 1 hour. Squeeze out water from wheat and mix with remaining ingredients.
