Dips & Dressings :: Green Herb Dressing

1 large garlic clove
1 tsp, capers, finely chopped
1/3 cup parsley
2 tsp Dijon mustard
6 basil leaves, shredded
2 tsp pepper
Salt to taste
½ cup light olive oil
1 Tbsp each of lemon juice, white wine vinegar & mayonnaise

Combine first 7 ingredients then gradually whisk in the oil, lemon juice, vinegar and mayonnaise. Can be used as a salad dressing or for over chicken or fish.
