250-300g moong dhal, washed and pre-soaked
3-4 Tbsp oil
1-2 chillis, chopped
1 tsp pepper
2 Tbsp lemon juice
1 tsp salt
2 tsp ginger, grated
2-3 carrots, grated
Put lentils in heavy pot, cover with boiling water and bring to the boil. Cook until tender and mash with spoon. Heat oil in pan, add ginger and chilli and fry for 1 min. Add carrot and saute, sprinkling a little water to soften them. Pour this over the cooked dhal, add salt and pepper and bring to a simmer. Add lemon juice and mix well.
