Desserts :: Rich Chocolate Ice Cream

3 Tbsp cocoa powder
½ cup sugar
375ml milk
100g chocolate chopped finely
3 egg yolks
1 tsp vanilla extract
250ml cream

Combine cocoa and half the sugar in a bowl. Pour in enough milk to make a paste and bring rest of milk to the boil. Pour hot milk onto the blend whisking all the while then return mixture to the pan. Bring gently to simmering point, and simmer 6 mins. Keep stirring. Remove from heat and stir in chopped chocolate.

In another bowl beat egg yolks and rest of sugar until pale. Pour in chocolate mixture and beat vigorously, then return mixture to the pan. Heat slowly, stirring often until simmering point. Remove from heat. Add vanilla and sit base of pan on a few centimetres of cold water. Strain, cover and chill in fridge.

When chilled, beat the cream into the mixture. Pour in icecream machine and churn until consistency of thick cream (20 mins). Pour in container and freeze. Serve within 2 hours (or allow 20-25 mins in the fridge if frozen solid).
