Desserts :: Clafoutis

2/3 cup flour
3 Tbsp sugar
3 eggs
Pinch of salt
2 ¼ cups milk
450g tin drained stoned fruit (plums/apricots)
15g butter

Sift flour into bowl, add sugar, eggs and salt. Gradually add in milk, beating constantly until smooth batter.

Grease a large flan dish with butter, spread fruit across and pour over batter. Dot with 15g butter. Bake at 190C for 35-45 mins until sponge is browned and risen. Serve hot or cold.
