Desserts :: Citrus Sorbet

100g sugar
125ml water
6 oranges
1 grapefruit
2 lemons
2 limes

Combine sugar and water in pan. Bring slowly to boil, stirring until sugar dissolves. Once boiling, turn heat down to simmer for 5 mins. Leave to cool.

Remove rind of 1 orange, grapefruit, 1 lemon and 1 lime with zester. Transfer rind to a sieve then pour boiling water over them and leave to drain.

Squeeze and strain juice from all fruit and combine with cooled syrup and strips of zest. Cover and chill in fridge.

When ready pour in machine and churn 20 mins until mixture is a soft ice. Put in container and freeze. Service within 1 hour (or allow 20-25 mins in the fridge if frozen solid).
