Chicken :: Thai Chicken Salad

1 bunch asparagus
200g snow peas, sliced
100g bean thread noodles
1 red capsicum, chopped
1 medium cucumber, seeded and chopped
500g chicken breasts
2 Tbsp fresh mint
1 Tbsp fresh coriander
¼ cup peanuts, toasted and chopped

Dressing:
1/3 cup sweet chilli sauce
2 Tbsp lime juice
2 Tbsp peanut oil
2 tsp fish sauce
1 clove garlic

Steam asparagus and now peas and drain. Cook noodles as directed. Cool.

Cook chicken on grill or BBQ. Slice thinly. Put everything into a bowl.

Make dressing and drizzle over salad. Garnish with fresh herbs.
