2 medium onions
3 cloves garlic, crushed
1 green pepper, diced
1 red pepper, diced
1 stalk celery, diced
3 zucchini, sliced
1 can tomatoes
3 cups chicken stock
½ cup white wine
1 tsp chilli powder
2 tsp cumin
2 tsp ground coriander
¼ cup rice
300g chicken thighs, chopped
Salt and pepper to taste
Fry onions until soft, add garlic, peppers and celery. Add tomatoes, stock and wine and bring to a boil. While simmering, brown chicken in a pan. Add chicken to liquid with zucchini, rice and spcies. Simmer 30 mins.
