Chicken :: Chicken and Feta Fritters

4 medium potatoes
2 Tbsp lemon juice
150g feta, crumbed
200g cooked chicken
4 spring onions
2 tsp coriander
¼ cup flour
2 eggs, lightly beaten
Salt and Pepper
Olive oil for cooking

Cook unpeeled potatoes until still firm. Drain, cool and peel. Grate and mix with next 5 ingredients.

Sprinkle flour over top and blend gently. Add eggs and seasonings. Mix well.

Cook fritters in oil until golder brown (3-4 mins each side). Place on paper towels to drain. Serve with salsa!
