4 chicken breasts, skin on
4 tsp cream cheese
4 tsp chutney or pesto
8 rashers bacon
Lift skin gently from chicken and place the cream cheese and chutney (or pesto) under the skin. Wrap chicken with 2 rashers of bacon strips and place on a hot BBQ or grill turning often for 15-25 mins (alternatively, bake at 200C for 15-20 mins). Serve with chargrilled vegetables and a pesto yoghurt sauce (or chutney and cream fraiche heated together).
