1½- 2 cups basil leaves
2 cloves garlic crushed
1 tsp grated ginger
¼ cup pinenuts
1-2 red chillis, deseeded
1 tsp sesame oil
½ cup good peanut oil
1 tsp brown sugar
1 Tbsp chopped fresh coriander
A pinch of salt
4 chicken breasts
Put all ingredients (except for chicken) in a food processor and process until forms a smooth paste.
Toss chicken in mixture and marinate for at least 2 hours in fridge (or over night).
Barbeque until cooked. Serve warm with salad.
