Cakes :: Sour Cream Lemon Cake

250g softened butter
2 cups sugar
6 lightly beaten eggs
4 tsp grated lemon rind
2 cups flour
2 tsp baking powder
1 cup light sour cream

Cream butter and sugar. Add eggs and lemon rind and blend. Fold in flour and baking powder alternatively with the sour cream. Mix gently until smooth and pour into greased 20cm spring bottom round tin. Bake at 160C for 60 mins.
Leave to cool. Pour on glaze while still warm (juice of 1 lemon & ¼ cup sugar melted together)
